Neste sector entram-se margens muito reduzidas e o projeto incidiu, na melhoria dos processos de encomenda, preparação de alimentos, elaboração de planos de contingência para falhas de ingredientes e assim reduzir o desperdício quer na preparação quer no stock de alimentos. Uma experiência ainda pioneira nesta área.
